Ingredients Needed For Mashed Cauliflower:

  • 1 large head cauliflower-3 pounds, cut into florets
  • 3 tbsp butter divided-plus more for serving, if desired
  • 2 tbsp sour cream or cream cheese or plain Greek yogurt
  • 4 cloves garlic, minced
  • 1/2 cup parmesan cheese, freshly grated
  • 1/2 tsp salt
  • 1/4 tsp pepper white pepper, if you have it-if not black pepper
  • dried parsley fakes or chives, optional

Instructions For Mashed Cauliflower:

  1. Rinse and cut the cauliflower into florets, making sure they are similar sizes. While you cut the cauliflower into florets, get a pot of salted water on the stove and start it boiling. 
  2. When the salted water is boiling, add the florets and cook until tender-about 10-15 minutes.
  3. Drain the cauliflower well and set aside. 
  4. Now, cook the minced garlic in a small frying pan with one tablespoon of butter until fragrant. 
  5. Next, add the cauliflower, the cooked minced garlic, two reserved tablespoons butter, sour cream, parmesan cheese, salt and pepper to a food processor or large blender. You may need to blend this a little at a time, depending on the size of your blender or food processor.
  6. Blend ingredients until smooth and creamy. 
  7. Serve in a serving bowl and top with extra melted butter. Sprinkle with dried parsley or chives, if desired.
