Broccoli Potato Cheese Soup


Broccoli Potato Cheese Soup is one of my favorites! I like the added potatoes to change traditional Broccoli Cheese Soup up. It is so great for these cold days and nights when all I want is to be home eating something warm!

Ingredients:

5 small potatoes, peeled and cubed

6 c. broccoli florets

3  14.5 oz. cans chicken broth

1 tsp. salt

1 tsp. pepper

1 tsp. garlic powder

1 tsp. onion powder

3 c. milk

1 c. parmesan cheese

3 1/2 c. cheddar cheese

2 Tbl. flour

Directions:

Bring  chicken broth, potatoes, and seasonings to a boil. Cook until potatoes are tender. Mash the potatoes until there are only small little chunks left.

Add broccoli and milk. Cook until broccoli is tender. Add in the parmesan cheese. Stir until melted.

Toss the cheddar cheese in the flour and coat it well. Put in a little bit of cheese at a time. Make sure the cheese melts before adding more or it will all clump up.
