Ingredients Needed for Baked Pineapple Chicken:

1 pound chicken tenders

1/2 cup Shake n’ Bake, original

2 1/2 cups Minute Rice, uncooked

1 20 ounces can pineapple tidbits, undrained

1 14 ounce can chicken broth

1/2 cup green pepper, diced (or red bell pepper works too)

Instructions for Baked Pineapple Chicken:

Spray a 9 x 13 baking dish with non-stick cooking spray.

Pour uncooked Minute Rice, pineapple and the pineapple juice, chicken broth, and diced green pepper into the baking dish. Stir to combine.

Place Shake n’ Bake in a bowl and coat the chicken strips, on all sides, with the Shake n’ Bake mixture.

Place coated chicken on top of the rice and pineapple mixture in the baking dish.

Cover baking dish with aluminum foil and bake at 350 degrees for 35-40 minutes-until Chicken is cooked through-no pink and rice has absorbed the chicken broth and pineapple juice.

Remove from the oven. Serve and enjoy this easy dinner!

Ingredients

  • 1 pound chicken tenders
  • 1/2 cup Shake n' Bake Original
  • 2 1/2 cups Minute Rice uncooked
  • 20 ounce can pineapple tidbits undrained
  • 14 ounce can chicken broth
  • 1/2 cup green pepper diced

Instructions

  1. Spray a 9 x 13 baking dish with non-stick cooking spray.

  2. Place uncooked Minute Rice, pineapple and the juice, chicken broth and the green pepper into the baking dish. Stir to combine.

  3. Place Shake n' Bake into a bowl and coat chicken tenders in mixture.

  4. Place coated chicken on top of the rice mixture in the baking dish.

  5. Cover with foil and bake at 350° for 35-40 minutes-until chicken has cooked through and rice has absorbed the broth and pineapple juice.

  6. Remove from oven and serve.
