Do you peel zucchini before using it in recipes?
Yes and No. The skin is tender, edible, and contains nutrients. For most baking recipes, simply wash zucchini well and grate it with the peel attached. If you have kids that think anything green is a NO, peel it. I have added peeled double shredded zucchini to homemade white bread to get a veggie into my granddaughter.
Should zucchini be squeezed dry before making zucchini bread?
It depends on the recipe. Most zucchini bread recipes benefit from zucchini’s moisture, but very watery zucchini may need a light squeeze. If you are using frozen shredded zucchini, let it thaw and yes, squeeze out the excess moisture.
Can you freeze shredded zucchini?
Yes. Shred zucchini, remove excess moisture if needed, and freeze in measured portions for future baking. Use freezer bags, vacuumed sealed bags or air tight containers for the freezer. Remember, when using frozen shredded zucchini, let it thaw and squeeze out the excess moisture.
How much zucchini equals one cup shredded?
One medium zucchini usually produces about 1–1½ cups shredded zucchini. Totally depends on the size of the zucchini, though.

How to Store Fresh Zucchini:
Fresh zucchini is easy to store and will stay delicious for several days if handled properly. For the best flavor and texture, leave zucchini unwashed until you’re ready to use it. Excess moisture can cause it to spoil more quickly. (Just like berries, as soon as I wash them, they start going bad)
Store whole zucchini in the refrigerator, preferably in the crisper drawer or inside a loosely closed plastic bag to help retain moisture while still allowing some airflow. Fresh zucchini will usually stay at its best for about 1 week, although smaller zucchini often last a little longer than very large ones.
If you’ve already cut your zucchini, wrap the cut end tightly with plastic wrap or place the pieces in an airtight container and refrigerate. Try to use cut zucchini within 2 to 3 days for the best quality.
If your garden is producing more zucchini than you can use, don’t worry! Zucchini freezes beautifully and can be enjoyed long after the growing season has ended. Grate and drain your excess zucchini and store it in freezer safe bags-or better yet use a SEALER for better storage. During the off season, take out a pre-measured bag of grated zucchini and make a chocolate cake or quick bread.
Can You Freeze Zucchini?
Absolutely! Zucchini is one of the easiest garden vegetables to freeze, and it’s a wonderful way to preserve your summer harvest.
For zucchini bread and other baked goods:
If you love baking zucchini bread, muffins, or cakes, simply shred the zucchini and lightly squeeze out some of the excess moisture. Measure it into the amounts your favorite recipes use (for example, 2-cup portions), place it in freezer bags or freezer-safe containers, remove as much air as possible, label, and freeze. When you’re ready to bake, thaw the zucchini in the refrigerator or on the counter and use it just as you would fresh zucchini. You may notice a little extra liquid after thawing—just drain off any excess as needed. If there is more than a little extra you can squeeze it out in paper towels. Don’t remove all of the moisture, however.
For soups, casseroles, and cooked dishes:
Slice or chop the zucchini into the size you normally use in recipes. For the best texture, blanch the zucchini by cooking it in boiling water for 1 to 2 minutes, then immediately transfer it to a bowl of ice water to stop the cooking. Drain well, pat dry, and spread the pieces on a baking sheet to freeze individually. Once frozen, transfer them to freezer bags or airtight containers and place back in the freezer.
Frozen zucchini works wonderfully in soups, casseroles, sauces, and other cooked dishes. Because it softens as it thaws, it isn’t ideal for fresh salads or recipes where crisp zucchini is important. Frozen zucchini will be soft.
How to Choose the Best Zucchini:
When shopping or harvesting zucchini, look for squash that feels firm and heavy for its size with smooth, glossy skin. Smaller to medium-sized zucchini are usually the most tender and have fewer seeds, making them perfect for baking, sautéing, casseroles, and side dishes.
Large zucchini can still be delicious, especially for breads, cakes, soups, and relish. If the zucchini has become oversized, simply cut it in half and scoop out the large seeds before using it in your recipe. I actually like the big zucchini for our Zucchini Relish. Just remove the seeds and then I have a bunch of zucchini to grate-I love the Salad Shooter for this. Also, with a Salad Shooter, I can grate the zucchini and then, place it back into the Salad Shooter to break up the pieces into smaller sizes-perfect for Chocolate Zucchini Cake.
