Carrots-add flavor and texture to this fall soup. You’ll need 3 1/2 cups of thinly sliced carrots. Slicing the carrots fairly thin helps them cook more quickly and evenly.
Celery-also adds savory flavor and balances the sweetness of the carrots in this easy soup recipe. Slicing the celery thinly helps the pieces cook faster and more evenly.
Fresh Ginger-is one of the flavors that makes this soup special. Peel and chop the ginger before adding it to the pot. It gives the soup a warm, slightly spicy flavor that pairs beautifully with sweet carrots.
Garlic Cloves-two large minced garlic cloves add another savory layer of flavor.
Chicken Broth-creates the soup’s base and gives the vegetables plenty of liquid to simmer in. I use three 14.5-ounce cans of chicken broth.

White Pepper-adds a subtle peppery flavor without adding black flecks to the smooth orange soup. If you only have black pepper and you do not mind the black flecks, go ahead and use black pepper.

How To Make Velvety Carrot Ginger Soup:
1. Prepare the vegetables:
Chop the onion, slice the carrots and celery thinly, peel and chop the fresh ginger, and mince the garlic.
Having everything prepared before you begin makes this soup come together easily.
2. Cook the vegetables:
Melt the butter in a deep pot over medium heat.
Add the chopped onion, sliced carrots, celery, and fresh ginger. Cook over medium heat for 15–20 minutes, stirring occasionally, until the vegetables are nearly tender.
Add the minced garlic during this cooking process so it has a chance to become fragrant without burning.
3. Add the chicken broth and seasonings:
Pour the chicken broth into the pot. Add the salt and white pepper and stir to combine.
Bring the soup to a boil.
4. Simmer the soup:
Once the soup comes to a boil, reduce the heat and simmer uncovered for 20–25 minutes, or until the carrots and other vegetables are completely tender.
The vegetables need to be very soft before blending. If the carrots(or celery) are still firm, give the soup a little more time.
5. Blend until smooth.
Carefully blend the soup in batches using a blender until it is smooth and creamy. I love using a Ninja Blender.
Be careful when blending hot soup. Don’t overfill the blender, and allow steam to escape according to your blender’s instructions. Place the blended soup into a serving bowl or pot stir well to blend the batches you have blended separately in your blender.
6. Serve:

Cook’s Notes:
Slice the carrots fairly thin. This helps the carrots cook at the same rate as the other vegetables and makes blending easier. I like to cut the celery thin as well.
Use fresh ginger. Fresh ginger gives this soup its distinctive warm flavor. Ground ginger won’t give quite the same fresh flavor or texture.
Let the vegetables become very tender. Since the soup is going to be blended, you want the carrots, celery, onion, and ginger to be soft enough to blend into a smooth soup. You want this carrot soup to be smooth and velvety.
Blend carefully. Hot liquids can create pressure in a blender. Work in small batches and follow your blender manufacturer’s instructions for blending hot foods. (I pop the vent a bit as well as blend small batches)
Want it completely smooth? Blend a little longer until the soup reaches the consistency you prefer.
Variations:
Make it Vegetarian: Use vegetable broth instead of chicken broth to make this soup vegetarian.
Add a Little Heavy Cream: This soup is creamy from the blended vegetables, so cream isn’t necessary. However, if you prefer a richer soup, you can stir in a little heavy cream after blending.
Make it Dairy-Free-Use olive oil instead of butter and skip the sour cream topping.
Add More Ginger: If you really enjoy the flavor of fresh ginger, you can increase the amount slightly for a stronger ginger flavor.

Carrot Ginger Soup
A cozy fall soup made with carrots, ginger, onion, carrots and celery.
Ingredients
- 1 tbsp butter
- 1 cup onion chopped
- 3 1/2 cups carrots peeled and sliced thin
- 1 cup celery sliced thin
- 1 1/2 tbsp fresh ginger peeled and chopped
- 2 large garlic cloves minced
- 3-14.5 ounce cans chicken broth
- 1 tsp salt
- 1/4 tsp white pepper
Instructions

Prepare your carrots, celery, onion and ginger.

Place butter in a deep stock pot and melt the butter.

Add the thinly sliced carrots, celery, chopped onion and ginger to the pan.

Cook over medium heat for 15-20 minutes. Stirring frequently.

Add the minced garlic half way through cooking the vegetables. Stir frequently.

When vegetable are nearly soft, add the chicken broth, salt and white pepper.

Bring the mixture to a boil.

Reduce heat and simmer uncovered for 20-25 minutes until vegetables are very tender. Stirring as needed.

Remove from the heat. Allow 5 minutes to cool.

In small batches, blend the soup in a good blender. (I like to use the single serve cup with my Ninja-Be careful removing the lid after blending-it will splatter out and it will be hot. Turn the lid a little to release some of the pressure before removing it the rest of the way-or use the big blender container and crack the vent.)

Blend each batch until smooth and creamy-no lumps.

Serve immediately with a crusty bread and top with a drizzle of sour cream and pumpkin seeds-optional but recommended.
