Ingredients Needed For Pumpkin Chocolate Chip Muffins:

  • 4 eggs, beaten
  • 1 1/2 cups sugar
  • 1 cup oil
  • 2 1/2 cups canned pumpkin (not pumpkin pie mix)-I prefer Libby’s brand pumpkin
  • 2 cup flour
  • 2 tsp baking powder
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon 
  • 1/8 tsp ground cloves, optional
  • 1 1/4 cups chocolate chips

Instructions For Pumpkin Chocolate Chip Muffins:

  1. Pre-heat the oven to 350°. This muffin recipe is quick to make. 
  2. Combine beaten eggs, sugar. oil and the pumpkin in a large mixing bowl, with an electric mixer or wooden spoon. Mix well.
  3. Add flour, baking powder, baking soda, salt, cinnamon and cloves to the pumpkin mixture. Mix just to combine-do not over mix.
  4. Fold in chocolate chips.
  5. Fill greased muffin pan cups two-thirds full with the batter (or use cupcake liners). 
  6. Bake for 18-20 minutes in a 350° pre-heated oven. 
  7. Serve and enjoy these moist and delicious muffins.
  8. NOTE: I like to lightly press a few chocolate chips into the top of the batter before baking.
