- 4 eggs, beaten
- 1 1/2 cups sugar
- 1 cup oil
- 2 1/2 cups canned pumpkin (not pumpkin pie mix)-I prefer Libby’s brand pumpkin
- 2 cup flour
- 2 tsp baking powder
- 2 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp ground cinnamon
- 1/8 tsp ground cloves, optional
- 1 1/4 cups chocolate chips
Instructions For Pumpkin Chocolate Chip Muffins:
- Pre-heat the oven to 350°. This muffin recipe is quick to make.
- Combine beaten eggs, sugar. oil and the pumpkin in a large mixing bowl, with an electric mixer or wooden spoon. Mix well.
- Add flour, baking powder, baking soda, salt, cinnamon and cloves to the pumpkin mixture. Mix just to combine-do not over mix.
- Fold in chocolate chips.
- Fill greased muffin pan cups two-thirds full with the batter (or use cupcake liners).
- Bake for 18-20 minutes in a 350° pre-heated oven.
- Serve and enjoy these moist and delicious muffins.
- NOTE: I like to lightly press a few chocolate chips into the top of the batter before baking.
