Instructions For Ham & Turkey Turnovers:

Thaw one sheet of Puff Pastry.

Dice the ham and the turkey into small bite-size pieces.

Slice the green onion. (If you do not have green onion, yellow or white onion will also work-don’t run to the store for onion-use what you have. Chop yellow or white onion into very small pieces)

Place meat and onion into a medium sized bowl. Set aside.

In a small bowl, combine the Dijon mustard, Worcestershire sauce, mayonnaise, salt and pepper. Mix well until smooth and creamy.

Now, combine the Dijon mixture with the prepared ham, turkey and onion. Set aside.

Cut thawed puff pastry into four equal squares.

Place the meat mixture onto half of each of the puff pastry squares (placing the meat on the angle so you can fold the other side over and make a triangle).

Cut the slices of Gouda in half and place on top of the meat mixture on each puff pastry square.

Fold puff pastry over the top of the meat and cheese to make a triangle. Press to seal the sides together. Hint: I like to use a little water on the tip of my finger to rub along the puff pastry edge where I will be sealing the two sides together.

Place turnovers onto a greased baking sheet.

Bake at 400 degrees for 20-25 minutes-until golden brown and heated through.

Serve immediately with a side salad or some preferred vegetables-we love green beans or asparagus with these turnovers.

OPTIONAL: you can brush an egg wash over the top of your turnovers-1 egg plus 1 tsp water. Mix and brush on top of the turnover for a rich golden shine when baked.

*These simple ham and turkey turnovers are perfect for leftover meat from the Thanksgiving and Christmas holidays. I love to dice and then, freeze some of the leftover meat.
