This holiday stuffed chicken has a delicious cranberry-orange flavor. The glaze has a little spice to it-which is so yummy. It is a great dinner idea for your next holiday party.

Ingredients Needed for Cranberry Orange Cream Cheese Stuffed Chicken:

2 pounds chicken breast-about 4 pieces

8 ounces cream cheese

1/4 cup Craisins

2 tsp orange zest

Glaze:

3/4 cup orange juice

1 tbsp orange zest

1/8 tsp ground cloves

1/8 tsp cinnamon

2 garlic cloves

1/2 tsp salt

1/4 tsp pepper

1 tsp chili powder

1/2 cup brown sugar

1 tsp cornstarch

2 tsp water

Instructions for Cranberry Orange Cream Cheese Stuffed Chicken:

With a mixer, blend room temperature cream cheese. Add orange zest and blend. Fold in chopped Craisins. Set aside.

Pound chicken breasts out. (Place chicken breast on a cutting board and cover with plastic wrap. Use a meat tenderizer to pound meat to a thinner thickness. Start in the middle and pound outward).

Divide cream cheese mixture up between the chicken breast. Put the mixture in the middle of the piece of chicken and carefully roll up. Use toothpicks to hold all edges closed.

Place chicken in a greased baking dish. Bake at 400 degrees for 30-35 minutes-Until cooked throughly. Turn on the broiler to brown up the chicken, if needed. Watch closely so they do not burn.

While the chicken cooks, make the orange glaze.

Dissolve corn starch in the 2 tablespoons of water.

In a small sauce pan, combine all of the glaze ingredients. Stir to combine.

Bring to a boil while stirring. Boil until liquid turns into a glaze. It should be thick like a syrup.

Serve glaze over stuffed cooked chicken. Enjoy!

Ingredients

Chicken Ingredients:

  • 2 pounds chicken breasts about 3-4 pieces
  • 8 ounces cream cheese softened
  • 1/4 cup Craisins chopped small
  • 2 tsp orange zest

Glaze Ingredients:

  • 3/4 cup orange juice preferably fresh squeezed-about two large oranges
  • 1 tbsp orange zest
  • 1/2 cup brown sugar
  • 1/8 tsp ground cloves
  • 1/8 tsp ground cinnamon
  • 2 cloves garlic minced
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 tsp chili powder
  • 1 tsp cornstarch
  • 2 tsp water

Instructions

Chicken Instructions:

  1. With a mixer, mix cream cheese until smooth and creamy.

  2. Add orange zest and blend.

  3. Fold in Craisins and set aside.

  4. Pound Chicken out to make chicken breasts thinner. Begin in the middle and pound outward. You will need to roll the chicken around the cream cheese mixture-pound them out thin but not so thin you make holes in the chicken breasts.

  5. Divide cream cheese mixture between chicken pieces-placing mixture in the middle.

  6. Carefully, roll chicken around cream cheese mixture and secue all edges with toothpicks.

  7. Place stuffed chicken in a greased baking dish and bake at 400° for 30-35 minutes-until cooked through.

  8. Turn on the broiler to brown the chicken, if needed. Watch closely.

Glaze Instructions:

  1. Dissolve cornstarch in the 2 teaspoons of water.

  2. Add all glaze ingredients, including the cornstarch and water, to a small sauce pan. Stir ingredients as you bring them to a boil. Continue stirring and boiling over medium heat to thicken glaze to a syrup thickness.

  3. Serve over stuffed, cooked chicken. Enjoy!
