This recipe has been in our family for longer than I have been alive. We love it, we make it every single year for Christmas, we share it with neighbors, friends, and family, and we usually make more than one batch. I tweaked this just a bit since I posted it in 2018. I wanted the chocolate to stay a bit more soft and gooey. So, I added just a little Karo corn syrup. I know corn syrup is something some of you may stay away from so…you can leave the corn syrup out and it will still be delicious.

I must say, I like it better than I did without the corn syrup. It just makes it stay more gooey, which is what I like about it. I always loved to eat it warm, in a bowl with a spoon just after making it. Now, I can eat it warm like I love it and later too because it stays gooey.

Ingredients Needed for Rocky Road:

2 6.8 ounce milk chocolate Symphony bars

1 14 ounce can sweetened condensed milk

16 ounces miniature marshmallows

1/4 cup Karo corn syrup

1 tsp vanilla

1 1/2 cups chopped almonds

I recently purchased a double boiler. It is amazing! The chocolate melted so smooth and creamy without me worrying about burning it or it getting too hot so it turns dry and hard and un-useable. If you have never used one, you will love it.

How to Make Rocky Road:

Place the miniature marshmallows in a large bowl and set aside.

Spray a 9 x 13 baking dish with a little cooking spray and set that aside, too.

Coarsely chop the almonds and set aside.

Place the sweetened condensed milk, Karo corn syrup, and the chocolate bars, that have been broken up into smaller chunks, in a thick bottomed sauce pan or double boiler. Melt slowly and stir frequently until chocolate mixture is smooth and creamy.

When the chocolate bar pieces have melted, remove from the heat and add the vanilla. Stir to combine.

Add the coarsely chopped almonds to the melted chocolate mixture and stir to combine.

Pour melted chocolate mixture over the miniature marshmallows a little at a time but quickly so the chocolate doesn’t set up. It’s helpful to have help: one person stirs and one person pours the chocolate slowly. If you are on your own however, just pour some chocolate mixture in and stir. Repeat until you have used all of the chocolate mixture.

When mixed, place the rocky road mixture in a 9×13 pan and let it set up. I like to eat a little bit of it in a bowl with a spoon when it’s warm and gooey. 😊 But, you will want to cut most of it into squares so, you need to let it cool. You can refrigerate this candy to help it set up. After you cut the candy, keep it refrigerated in an airtight container. Enjoy! Seriously, try it with a spoon when it’s still warm. Delicious!

Rocky Road

A delicious and simple homemade holiday candy recipe.

Ingredients

  • 2 6.8 ounces Symphony Chocolate Bars
  • 1 14 ounce can sweetened condensed milk
  • 1/4 cup Karo corn syrup
  • 1 tsp vanilla
  • 1 1/2 cups almonds coarsely chopped
  • 16 ounces miniature marshmallows

Instructions

  1. Coarsely chop the almonds and set aside.

  2. Place miniature marshmallows in a big bowl. Set aside.

  3. Lightly grease a 9 x 13 baking dish with cooking spray. Set aside.

  4. Place chocolate bars (broken into smaller pieces), sweetened condensed milk, and Karo corn syrup into a sauce pan or a double boiler.

  5. Heat slowly, stirring frequently until chocolate is melted, smooth and creamy.

  6. Remove from the heat and stir in vanilla and then, the chopped almonds. Stir to combine.

  7. Pour chocolate mixture over the marshmallows a little at a time-stirring between-until all of the chocolate mixture has been used.

  8. Pour Rocky Road into the 9 x 13 baking dish and allow time to cool. Refrigerate to make cutting easier.

  9. When Rocky Road has chilled, cut into desired pieces and enjoy!

  10. Store leftovers in the refrigerator.
