These Gingerbread Pancakes are delicious any month of the year but, we especially love them in December. They are easy to make and so perfect with our favorite Butter Syrup.

These Gingerbread Pancakes have a great flavor with the molasses, ginger, cloves, and cinnamon ingredients.

We use a griddle to cook these beautiful pancakes on. Griddles make for easy pancake flipping (and easy over medium egg-flipping).

We like gingerbread anytime of the year but, it is especially fun to make and eat during December. Gingerbread and Christmas just go together. We usually make these pancakes on a weekend. We will get together for breakfast and then go do something fun for Christmas. Family and friends are my favorite thing-I love planning and carrying out activities that are fun and build and strengthen relationships. Part of having fun and building relationships for me-is food. Good food, family, and friends make me happy!

Ingredients Needed for Gingerbread Pancakes:

Buttermilk

Eggs

Molasses

Oil

Flour

Sugar

Baking powder

Baking soda

Ginger

Salt

Cinnamon

Cloves

Instructions for Gingerbread Pancakes:

Combine eggs, milk, molasses and oil in a mixing bowl with a whisk.

In another bowl, combine flour, sugar, baking powder, baking soda, ground ginger, salt, cinnamon and cloves.

Gradually add dry ingredients to the wet ingredients. Stir to combine.

Cook on a hot griddle using non-stick cooking spray or butter.

Serve with your favorite syrup. We suggest Butter Syrup.

Ingredients

  • 2 cups buttermilk
  • 2 large eggs
  • 1/4 cup molasses
  • 2 tbsp oil
  • 2 cups flour
  • 2 tbsp sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp ground ginger
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1/8 tsp cloves

Instructions

  1. Combine buttermilk, eggs, molasses, and oil in a mixing bowl. Mix using a whisk.

  2. In another bowl, combine flour, sugar, baking powder, baking soda, ginger, salt, cinnamon, and cloves. stir to combine.

  3. Gradually add dry ingredients to wet ingredients. Stir to combine.

  4. Cook on a hot griddle using cooking spray to avoid sticking.
