I am a huge fan of Costco-Kirkland’s Bacon Crumbles. I do not love to cook bacon. My husband is great at it but, not me. I hate getting splattered with bacon grease and really, I don’t love to smell like bacon all day. However, I do love bacon. So, with the Kirkland’s Bacon Crumbles, I get bacon whenever I want with no splatters, and no smelling like bacon for the entire day!!

I have heard really good things about the Hormel fully cooked bacon strips, too. I have to try them. If you love to use those, just cut them up into small pieces-you need 1 3/4 cup bacon pieces for this recipe.

Ingredients Needed for Bacon Mushroom Breakfast Casserole:

Butter

Mushrooms

Onion

Garlic

Hash browns

Bacon Crumbles

Cheese

Eggs

Milk

Salt

Pepper

Parsley

Cooks Note:

This Bacon Mushroom Breakfast Casserole can be made the night before-you will just need to cook it for 10-15 minutes longer. You want the egg to be set in the middle of the 9 X 13 pan. This is very helpful for a week day breakfast. Get up and put the casserole in the oven while you get ready for work or school. Then, enjoy. Sometimes I will make this bacon mushroom breakfast casserole on Christmas Eve night and bake it in the morning before everyone wakes up. It really is delicious!

Bacon Mushroom Breakfast Casserole

The best breakfast casserole recipe ever!

Ingredients

  • 2 Tablespoons butter
  • 8 ounces whole white mushrooms sliced thin
  • 1 small onion diced
  • 2 cloves garlic minced
  • 6 cups frozen hashbrowns thawed
  • 1 3/4 cup Kirkland's Bacon Crumbles or your favorite bacon crumbles
  • 1 1/2 cups cheddar cheese grated
  • 6 large eggs
  • 2 cups milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon parsley

Instructions

  1. Slice mushrooms, dice onion, and mince garlic.

  2. Place butter in a frying pan and begin to melt. Add mushrooms, onion, and garlic in frying pan and cook until tender.

  3. Grease a 9 X 13 baking dish.

  4. Place hash browns in the bottom of the 9 X 13 dish.

  5. Sprinkle bacon crumbles on top of the hash browns.

  6. Using a slotted spoon, distribute the mushroom mixture evenly on top of the bacon. Leaving the liquid in the frying pan.

  7. Sprinkle the grated cheese on top of the mushroom mixture.

  8. In a mixing bowl, combine eggs, milk, salt, pepper, and parsley well with a whisk. Then, pour this mixture over all of the ingredients in the 9 X 13 baking dish.

  9. Cover with foil and allow to bake at 400° for 60-70 minutes. You want the egg to be set in the center of the casserole. Remove the foil for the last 3-5 minutes of baking.

  10. Allow to cool for 3-5 minutes. Serve and enjoy!!
