Cinnamon

Baking soda

Salt

Eggs

Carrot baby food

Cream cheese, softened

Powdered sugar

Butter, softened

Vanilla

Instructions for Carrot Cake Bars:

Cake Instructions:

Combine flour, cinnamon, baking soda and salt in a small bowl. Set aside.

Combine eggs, sugar, and oil until smooth. I use a whisk-an electric mixer can be used, too.

Then, add carrot baby food and vanilla. Mix to combine.

Pour into a 9×13 greased baking dish and bake at 350 degrees for 20-23 minutes.

Allow time to cool completely.

Frosting Instructions:

Combine cream cheese and softened butter until smooth, with an electric mixer.

Add vanilla and mix.

Add powdered sugar slowly. Mix until smooth and creamy.

Spread cream cheese frosting on cooled cake. Dust with cinnamon, if desired. Keep refrigerated.

  • 1 cup flour
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 2 large eggs
  • 1 cup sugar
  • 2/3 cup oil
  • 2 4 ounce containers carrot baby food
  • 1 1/2 tsp vanilla

Cream Cheese Frosting Ingredients:

  • 4 ounces cream cheese softened
  • 5 tbsp butter softened
  • 2 1/4 cups powdered sugar
  • 1 3/4 tsp vanilla

Instructions

Cake Instructions:

  1. Combine flour, cinnamon, baking soda and salt in a small bowl. Set aside.

  2. In a mixing bowl, combine eggs, sugar and oil with a whisk.

  3. Add carrot baby food and vanilla. Mix until combined.

  4. Pour into a greased 9 x 13 baking dish.

  5. Bake at 350 degrees for 20-23 minutes.

  6. Remove from oven when cake is cooked through and allow time for cake to cool completely.

Cream Cheese Frosting Instructions:

  1. In a mixing bowl, combine softened cream cheese with the softened butter using an electric mixture.

  2. Add vanilla and mix.

  3. Add powdered sugar a little at a time. Mix until smooth and creamy.

  4. Spread cream cheese frosting on cooled cake and dust with cinnamon, if desired. Enjoy!

  5. Refrigerate leftovers.
