Ingredients Needed For Chicken Gnocchi Soup:

  • 2 cups rotisserie chicken, chopped into bite size pieces
  • 1 cup celery, sliced thin
  • 1 cup carrots, grated
  • 1/2 cup onion, diced
  • 1/4 cup butter
  • 1/4 cup flour
  • 3 cloves garlic, minced
  • 3-14.5 ounce cans chicken broth 
  • 2 cups heavy whipping cream
  • 1 tsp salt 
  • 1/2 tsp pepper
  • 1 tsp thyme
  • 1/8 tsp poultry seasoning
  • 16 ounces potato gnocchi 
  • 2 cups baby spinach, roughly chopped

Instructions For Chicken Gnocchi Soup:

  1. Place butter, celery, carrots and onion into a large pot and cook on medium high heat to melt the butter and cook the vegetables-about 15 minutes.
  2. Turn heat down to medium and add flour and garlic. Stir and cook one more minute. 
  3. Add chicken broth, salt, pepper, thyme, poultry seasoning and heavy whipping cream. Simmer to finish cooking vegetables, if needed, and to thicken the soup.
  4. When vegetables are desired tenderness, and the soup has thickened, add the potato gnocchi and cook for two more minutes. 
  5. Add the chopped baby spinach, stir and allow enough time for the spinach to wilt. 
  6. Serve and enjoy with some fresh bread, if desired.

We love to buy Costco’s rotisserie chicken and clean off all of the meat. Next, we separate it into two cup packages or into pound packages. Then, vacuum seal the packages and freeze them for easy meals later on. We usually can get two pounds of chicken off of each chicken.
