Ingredients Needed For Tortellini Salad:

Salad Ingredients:

  • 1 pound cheese tortellini, thawed
  • 2 cups baby spinach 
  • 2 cups grape tomatoes, halved
  • 1/4 cup fresh basil, roughly chopped
  • 10 ounces marinated artichoke hearts-weight is without the juice
  • 6 ounces black olives, drained and halved
  • 1/2 cup freshly grated parmesan cheese, not powdered
  • 1 cup fresh mozzarella, cut into bite size pieces

Dressing Ingredients:

  • 1/3 cup olive oil 
  • 3 tbsp red wine vinegar
  • 1 tsp dijon mustard
  • 1/2 tsp garlic powder
  • 1 tsp Italian seasoning
  • 3/4 tsp salt
  • 1/2 tsp pepper

How To Make Tortellini Salad:

  1. Combine olive oil, red wine vinegar, dijon mustard, garlic powder, Italian seasoning, salt and pepper in a small mixing bowl. Mix well, cover with plastic wrap and place in the refrigerator to chill. 
  2. Allow tortellini time to thaw, if frozen. Set aside.
  3. While tortellini is thawing, prepare salad ingredients: halve the grape tomatoes and olives roughly chop basil and cut any artichoke hearts that are too big. Cut the mozzarella.
  4. In a large bowl, combine cheese tortellini, baby spinach, grape tomatoes, basil, artichoke hearts, black olives, grated parmesan cheese and mozzarella cheese. Carefully toss to combine.
  5. Pour chilled dressing over the salad mixture and mix to combine.
  6. Refrigerate to chill. Serve and enjoy!

Ingredients

Salad Ingredients:
