Barbecue Ranch Pasta Salad

I recently made this yummy pasta salad for a get together and it was gone so quick! I love all of the different colors from all of the different ingredients in this salad because it makes it very nice to look at.

Now let’s talk about how you make this great dish! You will start by cooking your pasta, rinsing it, draining it, and setting it to the side.

While the pasta is cooking, you will need to prep all of your vegetables. Cut up the onion, pepper, and jalapeno. Combine those chopped veggies with the drained beans and corn, lime juice, cheese, cilantro and the pasta.

Next you will combine the ranch, this is our favorite homemade version we use, and the barbecue sauce. I used Sweet Baby Ray’s but any barbecue sauce will work great.

Toss the ranch/barbecue sauce mixture with the rest of the ingredients until everything is well coated.

Cover the bowl with plastic wrap and place it in the fridge for at least an hour. This will give the salad a chance to get cold and for the flavors to combine.

If you make this the day before, the pasta will soak up some of the dressing. To remedy this, I will put in a little more ranch and barbecue sauce to get everything coated again.

Barbecue Ranch Pasta Salad

A great pasta salad dish for any summer event.

Ingredients

  • 16 oz. pasta
  • 1 can black beans rinsed and drained
  • 1 can corn drained
  • ¾ cup purple onion sliced and then quartered
  • ¾ cup yellow pepper chopped
  • 1 jalapeno seeded and chopped
  • 2 Tbsp. lime juice
  • cups cheddar cheese grated
  • ¼ cup cilantro chopped plus more for garnish
  • cups ranch
  • 6 Tbsp. barbecue sauce I used Sweet Baby Ray's

Instructions

  1. Cook pasta according to package directions. Drain, rinse with cold water and set aside for excess water to drain.

  2. Combine the beans, corn, onion, pepper, jalapeno, lime juice, cilantro, and cheese. Toss with the pasta until well mixed.

  3. Mix in the ranch and barbecue sauce until well coated.

  4. Refrigerate for at least 1 hour.

  5. Garnish with extra cilantro if desired.

  6. Enjoy!
