Cranberry Orange Cream Cheese Stuffed Chicken

Ingredients

Chicken Ingredients:

  • 2 pounds chicken breasts about 3-4 pieces
  • 8 ounces cream cheese softened
  • 1/4 cup Craisins chopped small
  • 2 tsp orange zest

Glaze Ingredients:

  • 3/4 cup orange juice preferably fresh squeezed-about two large oranges
  • 1 tbsp orange zest
  • 1/2 cup brown sugar
  • 1/8 tsp ground cloves
  • 1/8 tsp ground cinnamon
  • 2 cloves garlic minced
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 tsp chili powder
  • 1 tsp cornstarch
  • 2 tsp water

Instructions

Chicken Instructions:

  1. With a mixer, mix cream cheese until smooth and creamy.

  2. Add orange zest and blend.

  3. Fold in Craisins and set aside.

  4. Pound Chicken out to make chicken breasts thinner. Begin in the middle and pound outward. You will need to roll the chicken around the cream cheese mixture-pound them out thin but not so thin you make holes in the chicken breasts.

  5. Divide cream cheese mixture between chicken pieces-placing mixture in the middle.

  6. Carefully, roll chicken around cream cheese mixture and secue all edges with toothpicks.

  7. Place stuffed chicken in a greased baking dish and bake at 400° for 30-35 minutes-until cooked through.

  8. Turn on the broiler to brown the chicken, if needed. Watch closely.

Glaze Instructions:

  1. Dissolve cornstarch in the 2 teaspoons of water.

  2. Add all glaze ingredients, including the cornstarch and water, to a small sauce pan. Stir ingredients as you bring them to a boil. Continue stirring and boiling over medium heat to thicken glaze to a syrup thickness.

  3. Serve over stuffed, cooked chicken. Enjoy!
