Carrots are a favorite side at our house. They are great fresh, cold, and crunchy. We also like to roast them in the oven, sometimes alone, and sometimes with other delicious vegetables. They are yummy roasted with onion pieces, potato slices or small chunks, and/or bell pepper slices. It is fun to get creative with different roasted vegetables.

Ingredients Needed for Parmesan Roasted Carrots:

  • 4 cups carrots or baby carrots peeled and cut into similar sized pieces
  • 2 tbsp butter melted
  • 1/4 tsp pepper
  • 1 tsp garlic salt
  • 1 1/2 tbsp Kraft grated parmesan cheese
  • 1 tsp dried parsley to garnish

Instructions for Parmesan Roasted Carrots Recipe:

  1. Grease a baking sheet with cooking spray or cover a baking sheet with parchment paper.
  2. Place the carrots on the baking sheet.
  3. Melt the butter and drizzle it over the carrots. (or use olive oil, if preferred) The butter will start to solidify-its fine.
  4. Sprinkle pepper and garlic salt over the top of the carrots and spread them out in a single layer with some space between them.
  5. Bake for 25 minutes at 400°.
  6. Remove from oven and sprinkle the carrots with parmesan cheese. 
  7. Place back in the oven for 10-15 minutes-until carrots are desired tenderness. 
  8. Remove from oven and sprinkle with dried parsley.
  9. Serve and enjoy!
