
A simple roasted vegetable side-perfect for the whole family.
Grease a baking sheet with cooking spray or cover a baking sheet with parchment paper.
Place the carrots on the baking sheet.
Melt the butter and drizzle it over the carrots. (or use olive oil, if preferred) The butter will start to solidify-its fine.
Sprinkle pepper and garlic salt over the top of the carrots and spread them out in a single layer with some space between them.
Bake for 25 minutes at 400°.
Remove from oven and sprinkle the carrots with parmesan cheese.
Place back in the oven for 10-15 minutes-until carrots are desired tenderness.
Remove from oven and sprinkle with dried parsley.
Serve and enjoy!
