Nacho Casserole


My family loves this Nacho Casserole! It was delicious and so easy to make! This recipe is always in my dinner rotation because of how easy it is to put together and I always have the ingredients on hand.

I have also made a meatless version of this that turned out just as great! To make this meal meatless, in the first step of the directions you will cook the onion and red pepper together and then add the beans, chiles, and taco seasoning. The rest of the recipe follows the directions after that first step. 

Ingredients:

1 lb. ground turkey

1 can green chiles

1 can refried beans

1 can cream of mushroom soup

1 1.25 oz. taco seasoning

1/2 cup onion

3 cups cheese

1 cup sour cream

1/2 cup red pepper

11 oz. bag of chips minus about two cups

Directions:

In a large pan, cook turkey, onion and peppers until turkey is browned. Add in beans, chiles and taco seasoning. Mix well.

In a separate bowl, mix soup and sour cream.

Spread half of the sour cream mixture in the bottom of a greased 9×13 pan. Put an even layer of chips on top.

Spread half of the meat mixture on top of the chips.

Repeat layers one more time and top with cheese. Bake at 350 degrees for 20 minutes.
