- 4 slices white bread-or more if feeding more than two people
- basil pesto, we like Kirkland brand
- smoked gouda, sliced
- fresh parmesan cheese
- butter

How To Make Smoked Gouda Basil Pesto Grilled Cheese Sandwich:
- Heat a griddle to 300°-325°.
- Spread desired amount of the basil pesto on one side of two slices of bread.
- Top the pesto with as many slices of smoked gouda as you would like and place the plain pieces of bread on top of the cheese-to make two sandwiches.
- Spread a generous amount of butter on the outside of each sandwich-both sides.
- Butter the hot griddle and sprinkle fresh parmesan onto the griddle in two places. Place a sandwich on top of the sprinkled parmesan cheese. Lightly press more parmesan cheese into the top of the buttered sandwich.
- Cook, watching closely so the bread and cheese do not burn.
- NOTE:I like to place foil over the two sandwiches to hold the heat in-this helps the cheese melt faster.
- Flip the sandwiches when the bread is nicely toasted and cook until the other side is toasty and the cheese has melted.
