Cowboy Casserole

Ingredients:

1 pound ground beef

I small onion, chopped

1 cup bacon crumbles

4 ounce can diced jalapeños (*use 1 to 4 ounces depending on how spicy you like your food)

24 ounces tater-tots (enough to fill the bottom of a 9×13 baking dish

1 cup sour cream

1 1/4 cups milk

1 15 ounce can cheese soup, (NOT diluted)

1/4 teaspoon pepper

1/4 teaspoon garlic salt

1 1/2 to 2 cups cheddar cheese, grated

Lettuce and tomatoes to garnish

Directions:

Place tater tots in a greased 9×13 baking dish.

Crumble cook ground beef and onion in a deep frying pan.

In a bowl, combine sour cream, milk, cheese soup, pepper and garlic salt. Mix with a whisk.

Distribute meat mixture on top of the tater tots.

Distribute bacon crumbles and jalapeños on top of meat mixture.

Pour sour cream mixture over jalapeños.

Bake at 350 degrees (uncovered) for 40 minutes.

After 40 minutes, remove from oven. Sprinkle grated cheese on top and put back inside the oven just to melt the cheese.

Serve with shredded lettuce and diced tomatoes.
