Ingredients Needed For Avocado Corn Salsa:

  • 1 pound cherry tomatoes, Romas or garden tomatoes diced
  • 1 cup corn fresh off the cob
  • 2 medium avocados diced
  • 1/3-1/2 cup red onion chopped
  • 1/4-1/3 cup cilantro leaves chopped
  • 2 limes juiced
  • 2 garlic cloves minced
  • 1 1/2 tsp salt
  • 1/2 tsp pepper

Instructions For Avocado Corn Salsa:

  1. Cook the corn on the cob in the microwave, wrapped in a wet paper towel for about 3 minutes. Remove the corn from the microwave and slice the corn off of the cob, when the cobs are cool enough to handle. 
  2. Prepare the avocado, tomatoes, onion and cilantro. Place in a serving bowl with the corn.
  3. Add the lime juice, garlic, salt and pepper. Mix all ingredients together in a serving bowl and refrigerate to chill. 
  4. Mix again before serving. Serve with tortilla chips and enjoy!
