We love growing fruits and vegetables in our garden. It’s so fun to just go outside in the yard and pick what you need for dinner. If you have a garden, you know that you wait and wait for the plants to grow and for the fruits and vegetables to ripen and then, all at once, everything you have been waiting for is ripe. It is hard to know how to use it all. There are quite a few recipes on our blog that utilize garden fruits and vegetables. Still we have some go to waste, which is sad. The neighbors love our garden, too-because we share. Fresh fruits and vegetable from your own garden are fun and delicious!

There is no tomato from a grocery store that tastes as good as a tomato right from your own garden. We love to use our garden fresh tomatoes for this recipe. You can, of course, use store purchased tomatoes.

Ingredients Needed for Baked Bacon Tomatoes:

Tomatoes

Bacon Crumbles

Oil

Salt

Pepper

Panko bread crumbs

Parmesan cheese

Parsley

Garlic powder

Red pepper flakes

Instructions for Baked Bacon Tomatoes:

Slice tomatoes 1/4 inch thick.

Place tomatoes on a greased baking sheet.

Brush tomato slices with oil.

Top each tomato with bacon crumbles.

Combine salt, pepper, Panko bread crumbs, parmesan, parsley, garlic and red pepper flakes in a bowl.

Sprinkle each tomato with the bread crumb mixture.

Bake at 450 degrees for 20 minutes.

Ingredients

  • 4 large tomatoes sliced 1/4 inch thick
  • 2 tbsp oil
  • 1/2 cup bacon crumbles
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 3/4 cup Panko bread crumbs
  • 1/4 cup Kraft Parmesan cheese
  • 1 tbsp dried parsley
  • 1 tsp garlic powder
  • 1/8 tsp red pepper flakes

Instructions

  1. Slice tomatoes 1/4 inch thick and place on a greased baking sheet.

  2. Brush each tomato with oil.

  3. Sprinkle bacon crumbles over each tomato.

  4. In a bowl, combine salt, pepper, bread crumbs, parmesan cheese, parsley, garlic, and red pepper flakes.

  5. Cover each tomato slice with the bread crumb mixture.

  6. Bake at 450° for 20 minutes.

  7. Serve and enjoy!
