Honey Oat Bread


One of my FAVORITE things about this Honey Oat Bread is that from start to finish it only takes one hour! My second favorite thing is how it has the perfect amount of sweetness from the honey on it that keeps me coming back for third, fourths…. and let’s be honest here, fifths of this bread! This bread really is that good!

Ingredients:

Bread:

1 cup oats

2 1/3 cups flour

2 1/4 tsp. baking powder

1/4 tsp. baking soda

1 1/4 tsp. salt

1 cup sour cream

1 egg

1/4 cup olive oil

1/4 cup honey

3/4 cup milk

Topping:

2 Tbl. oats

1 1/2 Tbl. honey

Directions:

For the bread: Mix the oats, flour, baking powder, baking soda and salt. In a separate bowl mix the sour cream, egg, olive oil, honey, and milk. Add the the mixtures together and mix well. Do not over mix.

Preheat the oven to 375 degrees. Spray a loaf pan with non stick cooking spray. Sprinkle 1 Tbl. of the oats in the bottom of the pan. Evenly pour the bread mixture in and smooth the top over. Bake in the middle of the rack for 40-45 minutes or until a toothpick comes out clean. *Mine took 45 minutes but I would start checking it earlier just to be safe.

Remove from oven and place the pan on a cooling rack. Pour 1 1/2 Tbl. of honey evenly over the bread while it is still warm. Now sprinkle with the remaining 1 Tbl. of oats. Let cool for about 10-15 minutes. Remove the bread from the pan, cut and enjoy!
