Black Bean Burgers


Black Bean Burgers are delicious. This recipe is a little bit spicy-all of my family really like them. It’s a great meatless meal.

Ingredients:

30 ounces black beans, drained and rinsed 

1/2 can corn, drained

1 teaspoon dried cilantro

1/4 cup onion, chopped

1/2 cup red pepper

3 garlic cloves, minced

1 egg, beaten

3/4 cup panko crumbs

1/2 cup brown rice, cooked

1 small Roma tomato, chopped

1 small jalapeño pepper, diced

1/8 teaspoon cayenne pepper

1/4 teaspoon pepper

1/2 teaspoon salt

1 Tablespoon soy sauce

Directions:

1. Place black beans in a bowl and mash them up a bit so about 50% are smashed. 

2. Add remaining ingredients and mix well. Mixture should stick together. If it’s not sticking, add some more panko crumbs (just a little at a time so they aren’t too dry).

3. Heat a non-stick skillet or frying pan. 

4. Make burger patties in the size you like and set them in the hot pan. Heat through and brown a bit. Turn burgers and brown the other side. 

5. Serve with Spicy Guacamole, lettuce and tomato on a bun or use lettuce leaves in place of buns.
