NOTE:
Sometimes marinated artichoke hearts are not easy to find. Un-marinated artichoke hearts work great! If your can or bottle has a little more than 14 ounces-that’s fine too.

How To Make Cheesy Chicken & Artichoke Casserole:
- In a deep pot, cook the sliced celery and the sliced green onions in the butter. Cook for 7-8 minutes.
- With your hands, break up the chunks of rice inside the Uncle Ben’s rice packages before opening.
- Add the Uncle Ben’s rice to the celery and onion mixture. Stir.
- Add the artichoke hearts plus the juice, the seasonings and the diced rotisserie chicken. Stir to combine.
- Add the chunks of cream cheese. Stir to melt and combine.
- When cream cheese has melted, add 1 1/2 cups grated cheese, Stir to combine.
- Place the mixture into a greased 9 x 13 baking dish. Press to smooth out.
- Top the casserole with 1 cup of the grated cheese.
- Cover with foil and bake at 375 degrees for 35-40 minutes.

- 2 1/2 cups cheese shredded and divided
