An easy casserole recipe made with rotisserie chicken and marinated artichokes.
In a deep pot, cook celery and green onions in the butter. Cook for 7-8 minutes.
With your hands, break up the chunks of rice inside the Uncle Ben's rice packages, before opening.
Add the Uncle Ben's rice to the celery and onion mixture. Stir.
Add the artichoke hearts plus the juice, seasonings and diced rotisserie chicken. Stir to combine.
Add the chunks of cream cheese. Stir to melt and combine.
When cream cheese has melted, add 1 1/2 cups grated cheese. Stir to combine.
Place mixture into a greased 9 x 13 baking dish.
Top with 1 cup of grated cheese.
Cover with foil and bake at 375° for 35-40 minutes.
Enjoy with a salad, veggies and/or a yummy bread.
