The Best Chicken Enchilada Chili


Chicken Enchilada Chili is an easy Crock-Pot meal. It is filled with chicken, black beans, corn, enchilada sauce and much more.

This has got to be one of my all time favorite meals… and that is saying a lot because I love all food! It is ridiculously easy and is packed with so much flavor! It is very filling too which is a huge bonus!

My family likes to eat this by dipping tortilla chips into it. It makes the meal more filling which I really like too. If you don’t want to do that, this is great by itself as a freestanding chili dish too.

Ingredients Needed for Chicken Enchilada Chili:

Chicken breasts

Corn

Black beans

Enchilada sauce

Garlic cloves

Taco seasoning

Red pepper flakes

How to Make Chicken Enchilada Chili:

To make this Chicken Enchilada Chili you will start by combining the corn, beans, enchilada sauce, garlic, seasonings and chicken in a Crock-Pot. (Below is the Crock-Pot I have been using for years and I still love it!)

You will let all of those ingredients cook for either four or eight hours. After the time is up, you will shred the chicken and add in the cheese. That’s it! Now you can enjoy your meal.

I would strongly suggest adding in a dollop of sour cream to your bowl when you eat it. It makes this meal even more delicious in my opinion, because, it makes this chili creamy.

Red Sauce Cheese Enchiladas

Chicken Enchilada Chili

An easy crock pot version of chili with a chicken enchilada twist.

Ingredients

  • 1 lb. chicken breast
  • 1 can corn drained
  • 1 can black beans rinsed and drained
  • 19 oz. medium enchilada sauce
  • 3 cloves garlic minced
  • Tbsp. taco seasoning
  • ½ tsp. red pepper flakes
  • 2 cups cheddar cheese grated, plus more for topping
  • Sour Cream for topping
  • Parsley for garnish
  • Tortilla Chips for dipping

Instructions

  1. Spray your crock pot with non stick cooking spray.

  2. Combine the corn, beans, enchilada sauce, garlic, taco seasoning, and red pepper flakes. Stir to combine.

  3. Add in the chicken and spoon the mixture over the top of it.

  4. Cover and cook on high for 3-4 hours or low for 6-7 hours.

  5. Stir in 2 cups of the cheese and mix to melt it.

  6. Spoon the chili into bowls and top with extra cheese, sour cream, and parsley.

  7. Eat with chips or by itself.

  8. Enjoy!

This soup recipe has only nine ingredients plus salt and pepper, which also makes this recipe inexpensive to make. It is one of my daughter’s favorite soup recipes and she requests it often. We grow corn in our garden every year. I blanch the cobs of corn and then cut off the kernels. We freeze this corn in freezer bags to use all winter long. I use this frozen corn in this soup recipe sometimes, too.

Hamburger Casserole is a great comfort food recipe. This recipe calls for ten ingredients. Many of which are always found in my pantry-as I am sure most of your pantries hold them too. We have used ground beef in this recipe as well as ground turkey. Both are great and yummy. Having some tortilla chips along side of this main dish is always fun and adds a crunch. I love to send leftovers for my husband’s lunch-so recipes that re-heat well are great for that.
