Ingredients Needed For Mexican Street Corn Pasta Salad:

2 cups small shells pasta, cooked and drained well

2 15 ounce cans canned corn, drained

2 green onions plus stems, sliced and chopped

1/3 cup cilantro, chopped

4 ounces diced jalapeños, drained

1 15 ounce can black beans, drained and rinsed

2 garlic cloves, minced

1/2 tablespoon olive oil

Dressing:

1/2 cup mayo

4 tablespoon lime juice

1/8 teaspoon cumin

1/4 teaspoon paprika

1/2 teaspoon chili powder

1 teaspoon sriracha

1/8 teaspoon salt

1/8 teaspoon pepper

Instructions For Mexican Street Corn Pasta Salad:

Cook pasta until al dente. Drain and rinse with cold water. Let excess water drip out onto a paper towel while you prepare the rest of the salad.

In a frying pan on medium high heat, add olive oil, corn, onion, and garlic. Cook until you get a dark color on the corn.

Combine all ingredients to make the dressing and mix well.

Combine pasta, corn mixture, cilantro, jalapeno, black beans and dressing. Mix well. Sprinkle with extra paprika, chili powder and cilantro to garnish.

Ingredients

  • 2 cups small shell pasta
  • 2 15 ounce cans corn drained
  • 2 green onions, plus stems sliced and chopped
  • 1/3 cup cilantro leaves chopped
  • 1 4 oz can diced jalapenos
  • 1 15 ounce can black beans drained and rinsed
  • 2 cloves garlic minced
  • 1/2 tbsp olive oil

Dressing:

  • 1/2 cup Best Foods Mayonnaise
  • 4 tbsp lime juice
  • 1/8 tsp cumin
  • 1/4 tsp paprika
  • 1/2 tsp chili powder
  • 1 tsp sriracha
  • 1/8 tsp salt
  • 1/8 tsp black pepper

Instructions

  1. Cook pasta to al dente. Drain, rinse and set aside on paper towel to continue draining.

  2. In a frying pan, cook the corn, green onion and garlic in the olive oil until the corn browns.

  3. Combine all ingredients to make the dressing, mix well.

  4. Combine pasta, corn mixture, cilantro, jalapeños, black beans and dressing. Fold together to mix well.

  5. Sprinkle extra paprika, chili powder and cilantro over the top to garnish. Serve and enjoy.
