Ingredients Needed For Lemon Zucchini Bread:
- 2 cups flour
- 1/2 tsp salt
- 3/4 tsp baking powder
- 3/4 tsp baking soda
- 1 cup sugar
- 2 tbsp fresh squeezed lemon juice
- 1/2 full tbsp lemon zest
- 2 large eggs
- 1/2 cup oil
- 1/2 cups milk
- 1 1/2 cups zucchini, grated
- Lemon Icing:
- 1/2 cup powdered sugar
- 1 tbsp lemon juice

How To Make Lemon Zucchini Bread:
- In a medium sized mixing bowl, whisk sugar, lemon zest, lemon juice, eggs, oil and milk together until mixed well.
- Add flour, salt, baking powder and baking soda. Whisk to just combine.
- Fold in grated zucchini. Make sure there are no clumps of grated zucchini in the batter.
- Pour batter into a greased bread pan.
- Bake in a 350° oven for 40-45 minutes or until a toothpick comes out clean.
- Remove from the oven and let cool for 5-10 minutes.
- Remove from the pan and drizzle the lemon icing over the top. Slice and enjoy!
Lemon Icing:
- Add ingredients to a small bowl and mix with a spoon until smooth and creamy. Set aside to drizzle over the warm bread after baking.
