Ingredients

  • 2 cups flour
  • 1/2 tsp salt
  • 3/4 tsp baking powder
  • 3/4 tsp baking soda
  • 1 cup sugar
  • 2 tbsp fresh squeezed lemon juice
  • 1/2 full tbsp lemon zest
  • 2 large eggs
  • 1/2 cup oil
  • 1/2 cups milk
  • 1 1/2 cups zucchini grated

Lemon Icing:

  • 1/2 cup powdered sugar
  • 1 tbsp lemon juice

Instructions

  1. In a mixing bowl, whisk sugar, lemon zest, lemon juice, eggs, oil and milk.

  2. Add flour, salt, baking powder and baking soda. Whisk to combine.

  3. Fold in grated zucchini.

  4. Pour batter into a greased bread pan.

  5. Bake in a 350° oven for 40-45 minutes or until a toothpick comes out clean.

  6. Remove from the oven and let cool for 5-10 minutes.

  7. Remove from the pan and drizzle the lemon icing over the top. Slice and enjoy!

Lemon Icing:

  1. Add ingredients to a bowl and mix until smooth.
