Instructions for Vanilla Mousse Pie:
Crush the graham crackers in a blender and combine with the sugar in a small to medium sized mixing bowl. I love the Ninja Blender-it is one of my favorite kitchen tools. You have to get one with the single serve cups included. The single serve blender cups are perfect for crushing graham crackers (see above)!!
Melt the butter and mix into the graham cracker and sugar mixture.
Press graham cracker crust mixture into a 9 inch pie pan and bake at 350 degrees for 8-9 minutes.
While the graham cracker pie crust bakes, combine the instant vanilla pudding with the milk, using an electric mixer. Mix until it is smooth and creamy.
Now add the heavy cream (a little at a time if desired-so it doesn’t splash out of your bowl) and mix with an electric mixer until smooth, creamy, and thick. Thick enough so when you cut the pie later the mousse will stay where it belongs, not squish out into the empty space where you removed a piece of pie.
Refrigerate the pie to chill. When the pie has chilled, serve with whipping cream, if desired. We always have whipping cream on hand-it is delicious and pretty on top of desserts (Reddi Wip with real cream is our favorite).

Graham Cracker Crust:
- 1 sleeve graham crackers crushed
- 1/4 cup sugar
- 1/4 cup butter
- 1 ½ cups milk
- 1 ½ cups heavy cream
- 5.1 ounce box instant vanilla pudding
Graham Cracker Crust:
Crush graham crackers in a blender.
Mix crushed graham crackers with the sugar.

With an electric mixer, combine vanilla pudding mix with milk. Blend until smooth and creamy.
Add heavy cream, slowly if desired. Mix until smooth, creamy, and thick enough to stay in its place when you cut into the pie.
When mousse has thickened, spoon the mixture into the cooled graham cracker pie crust and refrigerate to chill.
