Layered Breakfast Muffins


These Layered Breakfast Muffins are a fun switch up from your normal breakfast! The seasoned fries in the bottom add great flavor to the whole breakfast.

Ingredients:

1 1/2 c. seasoned fries, chopped

1/2 c. bacon

1/4 c. banana peppers, chopped

1/2 c. milk

4 eggs

1 tsp. chopped chives

1 c. cheddar cheese, grated

Salt and pepper to taste

Directions:

Combine milk, eggs, chives, salt, and pepper in a bowl and mix until smooth. Add in the cheese and mix.

Spray a muffin tin with non stick cooking spray. Evenly distribute the fries into each cup. Repeat with the bacon and then the banana peppers. Pour the egg mixture over the layers in the muffin tin.

Bake at 350 for 15-20 minutes.
