Easter Basket Cakes

I used the recipe on the back of the basket baking pan-Nordic Ware Shortcake Baskets Baking Pan.

This is the cutest pan! The Easter baskets are just one way to use this pan. Strawberry Shortcake for Mother’s Day dessert is so fun and so pretty. Your mother will love it! Fill these basket cakes for Valentine’s Day with conversation hearts, red hots, cinnamon lips, any of the cute and fun candy the candy companies make for Valentine’s Day. Coloring the cake batter orange for Halloween and filling it with little Halloween candies-like, the little skull and bones Sweet Tarts. We hope you have as much fun with these little basket cakes as we have!

Ingredients Needed for Easter Basket Cakes:

1 cup flour

2/3 cup sugar

1  1/2 teaspoon baking powder

1/4 teaspoon salt

1/4 teaspoon vanilla

1/3 cup butter, softened

1/2 cup milk

1 egg

Various candies to decorate baskets with such as: jelly beans, mini Cadbury eggs, Reese’s pieces candies, whipping cream, cut up strawberries, and/ or coconut dyed green.

How to Make Easter Basket Cakes:

1. Grease and flour the basket pan VERY well.

2. In a large mixing bowl, combine all ingredients until smooth-except the items to decorate with.

3. Pour batter into pan. DO NOT use all of the batter. Keep a little out. I divided all of the batter and it flowed over when I baked them the first time. (If they do flow over, use a knife to flatten the bottoms off after baking).

5. Bake at 350 degrees for 18 minutes.

6. Let cool in pan for about seven minutes. Invert onto a cooling rack to finish cooling.

7. Decorate and serve.
