Frozen Strawberry Ice Cream Pie with an Oatmeal Cookie Crust is a perfect and easy dessert for a hot summer day. Ice cream is perfect for me any day of the year. It’s delicious and refreshing!
This oatmeal cookie crust adds a great flavor. It is such an easy dessert recipe with very few ingredients. We would love to hear what you like about it.
Crust Ingredients:
12 oatmeal cookies (I used Walmart’s brand) Link to cookies: Great Value Oatmeal Cookies
1/4 cup sugar
1/4 cup butter, melted
Pie ingredients:
1 1/2 cups vanilla ice cream
1 cup Cool Whip
5-6 strawberries to equal 1/2 cup puréed. Of course, I used my Ninja blender. (other berries will also be yummy)
Crust Directions:
Place a few oatmeal cookies in a blender at a time-I used a Ninja Blender. I love the Ninja blender. Continue crushing the cookies and pouring them into a bowl. The crumbs should be crushed Link to: Ninja Blender
In the bowl with the cookie crumbs, mix the cookie crumbs, sugar, and melted butter together until well blended.
Press this mixture into a 9 inch pie tin.
Pie Directions:
In a bowl, allow ice cream to melt enough to be able to combine other ingredients. Then, add Cool Whip and puréed strawberries. Stir until well blended and smooth.
Pour the ice cream mixture into the oatmeal cookie crust. Cover with plastic wrap and freeze.
When ready to serve, let pie sit out for a few minutes so it can be cut.
Serve with Reddi Whip or Cool Whip and Enjoy!
