Four Cheese Manicotti


This Four Cheese Manicotti is soon to become your new favorite manicotti! It is easy to make and so cheesy you might just want to eat the inside all on it’s own.

Ingredients:

1  8 oz. package manicotti

15 oz. ricotta cheese

2 c. mozzarella 1 1/2 cups in, 1/2 cup on top

1/2 c. parmesan cheese

3/4 c. cottage cheese

1 egg, beaten

2 garlic cloves, minced

1/4 tsp. salt

1/8 tsp. pepper

1/2-3/4 Tbl. parsley flakes

12 oz. pasta sauce

Directions:

Cook pasta according to package directions in salt water. Drain and lay out individually to keep them from sticking to each other and breaking.

Blend cottage cheese in a blender until smooth. Combine cottage cheese in a bowl with ricotta, 1 1/2 cups mozzarella, the egg, garlic, salt, pepper, and parsley. Mix well.

Fill up the noodles with the cheese mixture. Pour half of the pasta sauce into a greased 9×13 pan. Arrange the noodles in the pan and top with the remaining pasta sauce and 1/2 cup of mozzarella.

Bake at 350 for 40 minutes. If desired, broil for 2 minutes.
