Loaded Mashed Potatoes 


These Loaded Mashed Potatoes are so creamy, easy, and full of flavor. They are loaded with all of the good stuff… cheese, bacon, onion, and yummy seasonings to make them super flavorful!

This dish is made from instant mashed potatoes but if you wanted to make real ones and use those, you definitely can! There are quite a few people I know who will only make real potatoes but I don’t always have the time for that so these work great in a pinch. I buy these instant mashed potatoes from Costco and they taste great!

To make these potatoes, you’ll start out by making the instant potatoes according to their package directions. Next you will add in the sour cream, salt, pepper, garlic salt, onion powder, and the chicken bullion cube. Mix that well so that the spices are evenly distributed and the chicken bullion cube gets completely broken up and mixed in.

Add in all of the parmesan cheese, 1/2 cup of the cheddar cheese, and 1/2 cup of the crumbled bacon. The rest of what you don’t put in the potatoes will go on top after you bake it.

Pour the potatoes into a greased baking dish and bake at 350 degrees for 25 minutes. Remove the dish from the oven, top with the remaining cheese and bacon and return it to the oven to let the cheese melt. Last, you’ll top the potatoes with the green onions.

I love how these mashed potatoes are such an easy side dish that go with a variety of main courses for dinner. We like to eat these when we make West Coast Tri-Tip which is also an amazing dish or any other meat dish.

Loaded Mashed Potatoes

A creamy, easy mashed potato side dish loaded with bacon, onion, cheese and seasonings.

Ingredients

  • 1 6.4 oz. package mashed potatoes
  • ¾ cup sour cream
  • ½ tsp. salt
  • ½ tsp. pepper
  • ½ tsp. garlic salt
  • ½ tsp. onion powder
  • 1 chicken bullion cube
  • cup parmesan cheese grated
  • cups cheddar cheese
  • 1 cup bacon crumbled
  • 2 green onions diced

Instructions

  1. Cook potatoes according to package directions. Add in the sour cream and mix well.

  2. Add in salt, pepper, garlic salt, onion powder, and chicken bullion cube. Stir to combine.

  3. Mix in parmesan cheese, 1 cup of the cheddar cheese, and 1/2 cup of the bacon.

  4. Place mixture in a greased 1.5 quart baking pan and bake for 25 minutes at 350 degrees. Take the dish out of the oven and add remaining 1/2 cup cheddar cheese and 1/2 cup bacon.

  5. Return to the oven for 5 minutes.

  6. Take out of the oven and top with the green onion.

  7. Serve and enjoy!
