This breakfast casserole is one of my favorite recipes on our food recipe blog! I like to make this for breakfast or dinner. It is always fun to have breakfast for dinner as a nice change and since it is so easy to make it also feels like a break from cooking a “typical” dinner.

What I love about this dish too, is that I normally keep all of the ingredients for this on hand so it makes for a really great last minute meal when I haven’t planned anything else. Some days a quick meal is needed at our house. Families are busy but, we still need good food to enjoy together. We hope you will find helpful recipes here, on our food recipe blog, for your family.

Instructions for Bacon Hash Brown Breakfast Casserole Recipe:

To make this casserole dish, you start out by cooking and crumbling your bacon-unless you use bacon crumbles or pre-cooked bacon like I do, thawing your hash browns, slicing and chopping your green onion, grating your cheese-if you buy cheese in a block, and greasing your 9×13 baking dish.

Next, spread your hash browns out in a greased 9×13 baking dish, top it with the drained canned mushrooms, chopped green onion, and crumbled bacon. Then, sprinkle the Kraft grated parmesan cheese on top of all of that. Then, the grated cheddar cheese.

Now, in a mixing bowl, place seasonings, milk, and eggs. Whisk this mixture together well and pour evenly over all of the good stuff that is already in your 9×13 baking dish.

Last, cover with foil and bake at 400 degrees for 40-45 minutes. When you come back, you have an amazingly smelling and tasting Bacon Hash Brown Breakfast Casserole your whole family will love!

Ingredients

  • 4 cups hash browns thawed
  • ½ cup green onion sliced and chopped
  • 1 can mushrooms drained
  • 1 cup bacon crumbles
  • 6 eggs
  • 1/2 cup milk
  • ½ tsp garlic powder
  • ½ tsp pepper
  • ½ tsp parsley
  • 1 tsp salt
  • cup parmesan cheese shredded
  • 1 cup cheddar cheese grated

Instructions

  1. Spray a 9×13 pan with non-stick cooking spray and spread the hash browns evenly on the bottom.

  2. Evenly distribute the onions, mushrooms, and bacon over the top of the hash browns.

  3. Top with both cheeses.

  4. Whisk the eggs, milk, and seasonings in a mixing bowl-mix them well. Pour over the ingredients in the 9×13 baking dish.

  5. Cover with foil and bake at 400 degrees for 40-45 minutes.

  6. Enjoy!
