Cathy’s Brownies


Cathy’s brownies are a game changer! They are my husband’s number one dessert request and what I made for his birthday this year. It’s a cake brownie with just the right amount of chocolate frosting on top. This recipe comes from the Lionhouse Cookbook, Irresistible Cookies and Sweets.

Ingredients:

Brownies:
1 cup butter or margarine
1/2 cup cocoa
4 eggs
2 cups sugar
1 1/2 cups flour
1/2 teaspoon salt
1/2 teaspoon baking soda
3/4 cup chopped nuts, optional

Melt butter and stir in cocoa. Cool. Beat eggs, gradually add the sugar a little at a time. Add vanilla to chocolate mixture. Sift together the flour, salt, and baking soda. Add to creamed mixture. Stir in nuts if using. Pour into 9×13 greased baking pan. Bake at 350 degrees for about 30 minutes or until toothpick comes out clean. Cool.

Frosting:
1/4 cup cocoa
1/4 cup butter or margarine
5 tablespoons milk
3 cups powdered sugar

Melt butter and stir in cocoa. Add milk and beat in powdered sugar to spreading consistency. Pour and spread over cooled brownies. Frosting will become more firm as it cools.
