This Tuscan Tortellini Casserole is delicious. It is easy and quick to make. This is a great casserole for those busy weeknights.
16 ounces small curd cottage cheese
1/2 cup milk
1 cup frozen spinach, thawed moisture removed
3/4 cup sun dried tomatoes, chopped
1 Tablespoon basil pesto
1/2 teaspoon pepper
2 garlic cloves, minced
1 12.5 ounce can chicken breast
24 ounces cheese tortellini
1 cup Mozzarella cheese, grated
Directions:
Grease a 9×13 baking dish.
Place cottage cheese, milk, spinach, sun dried tomatoes, pesto, pepper, and garlic in greased baking dish.
Drain the chicken and add to the baking dish, breaking into smaller pieces as you add it to the dish.
Add tortellini and stir ingredients carefully-don’t break the tortellini pieces.
Bake at 350 degrees for 30 minutes.
Remove from oven and top with grated cheese.
Return to the oven to melt cheese.
Serve and enjoy this quick casserole.
