Mexican Street Corn Pasta Salad

Ingredients

  • 2 cups small shell pasta
  • 2 15 ounce cans corn drained
  • 2 green onions, plus stems sliced and chopped
  • 1/3 cup cilantro leaves chopped
  • 1 4 oz can diced jalapenos
  • 1 15 ounce can black beans drained and rinsed
  • 2 cloves garlic minced
  • 1/2 tbsp olive oil

Dressing:

  • 1/2 cup Best Foods Mayonnaise
  • 4 tbsp lime juice
  • 1/8 tsp cumin
  • 1/4 tsp paprika
  • 1/2 tsp chili powder
  • 1 tsp sriracha
  • 1/8 tsp salt
  • 1/8 tsp black pepper

Instructions

  1. Cook pasta to al dente. Drain, rinse and set aside on paper towel to continue draining.

  2. In a frying pan, cook the corn, green onion and garlic in the olive oil until the corn browns.

  3. Combine all ingredients to make the dressing, mix well.

  4. Combine pasta, corn mixture, cilantro, jalapeƱos, black beans and dressing. Fold together to mix well.

  5. Sprinkle extra paprika, chili powder and cilantro over the top to garnish. Serve and enjoy.
