Ingredients

  • 1 pound cherry tomatoes, Romas or garden tomatoes diced
  • 1 cup corn fresh off the cob
  • 2 medium avocados diced
  • 1/3-1/2 cup red onion chopped
  • 1/4-1/3 cup cilantro leaves chopped
  • 2 limes juiced
  • 2 garlic cloves minced
  • 1 1/2 tsp salt
  • 1/2 tsp pepper

Instructions

  1. Cook the corn on the cob in the microwave, wrapped in a wet paper towel for about 3 minutes. Remove from the microwave and slice the corn off of the cob when the cobs are cool enough to handle.

  2. Mix all ingredients together in a serving bowl and refrigerate to chill.

  3. Serve with tortilla chips and enjoy!
