An easy dinner idea with tender shredded pork inside a grilled cheese sandwich.
Cook pork loin in a slow cooker for 4-6 hours on low until cooked through.
Remove cooked pork loin from the slow cooker and shred.
Drain juices from the slow cooker and place shredded pork back into the slow cooker.
Cover shredded pork with desired amount of barbecue sauce and heat through.
Butter bread on all sides and place on a pre-heated griddle or in an electric frying pan-the lid with an electric frying pan will help the cheese melt.
Place cheese slices onto each piece of bread. Heat to melt and toast bread.
Add hot pulled pork and coleslaw (if desired) to half of the bread slices.
Place sides together to make a sandwich and enjoy!
One and a half pound pork loin made five sandwiches.
