Ingredients

  • 1 1/2 cups raw pumpkin seeds
  • 2 tsp butter
  • 1/4 tsp salt
  • 1/4 tsp freshly cracked pepper

Instructions

  1. Pre-heat oven to 300°

  2. Remove the pumpkin flesh from the pumpkin seeds and rinse the seeds in water. Use a colander.

  3. Place rinsed pumpkin seeds on paper towel and pat dry.

  4. Place pumpkin seeds on a large baking sheet.

  5. Melt the butter and drizzle it over the pumpkin seeds.

  6. Sprinkle the seeds with salt and pepper. Toss to coat.

  7. Spread the pumpkin seeds out in a single layer.

  8. Bake pumpkin seeds in a 300° oven for 45 minutes. Stir occasionally as they roast.

  9. Remove from the oven and allow time to completely cool.

  10. Store in a bag or airtight container at room temperature for up to two weeks.
