A fun and yummy snack to make with the seeds from your holiday jack o' lantern.
Pre-heat oven to 300°
Remove the pumpkin flesh from the pumpkin seeds and rinse the seeds in water. Use a colander.
Place rinsed pumpkin seeds on paper towel and pat dry.
Place pumpkin seeds on a large baking sheet.
Melt the butter and drizzle it over the pumpkin seeds.
Sprinkle the seeds with salt and pepper. Toss to coat.
Spread the pumpkin seeds out in a single layer.
Bake pumpkin seeds in a 300° oven for 45 minutes. Stir occasionally as they roast.
Remove from the oven and allow time to completely cool.
Store in a bag or airtight container at room temperature for up to two weeks.
