A quick and healthy side dish using garden vegetables.
Cut both zucchinis in half and slice.
Cut onion in half and slice into desired side pieces.
Add oil to large skillet or frying pan and heat.
Add minced garlic, zucchini, and onions.
Cook, stirring frequently to avoid burning.
As mixture cooks, it will get brown on the bottom of the pan-this gives the vegetables a good flavor. Just add a bit of water as needed so it browns and doesn't burn.
Add salt and pepper. Stir to combine.
Serve with freshly grated parmesan cheese.
