Caprese Chicken Casserole

Ingredients

  • 12 ounces pasta cooked and drained
  • 3/4 cup milk
  • 3 cups grape or cherry tomatoes cut in half
  • 1 ½ cups rotisserie chicken cut into bite-sized pieces
  • 1 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 20 leaves basil 12 for recipe, chopped a bit and 8 or more full leaves to garnish
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 5 ounce Boursin cheeses garlic & fine herb or Shallot & Chive (or one of each)

Instructions

  1. Cook pasta according to the package directions. Drain and place in greased 9 x 13 baking dish.

  2. While the pasta cooks, cut the chicken and tomatoes.

  3. Place chicken and tomaotes into the baking dish.

  4. Drizzle the olive oil, basalmic vinegar and milk over the pasta mixture.

  5. Sprinkle mixture with salt and pepper. Stir to comine ingredients.

  6. Unwrap both Boursin cheeses and place in the center of the baking dish-press into the pasta mixture a few inches apart.

  7. Cover with aluminum foil and bake at 400 for 25 minutes.

  8. Remove from oven. Remove foil and stir the basil into the casserole, mix well to combine all ingredients. Add a little more milk if desired to reach desired consistency.

  9. Top with extra basil leaves and serve. Enjoy this easy dinner recipe.
