Ingredients

  • 3- 10 ounce cans Rotel
  • 15 ounce can black beans drained and rinsed
  • 1 ½ cups frozen corn thawed
  • 2 anaheim peppers seeded and stems removed
  • 3 jalapeños seeded and stems removed
  • 1 small onion quartered
  • 1 bell pepper seeded and stem removed
  • 1/4 cup cilantro leaves
  • 3 cloves garlic minced
  • 1 tsp salt
  • 1 tbsp lime juice

Instructions

  1. Place Rotel, anaheim peppers, jalapeños, onion, bell pepper, garlic, salt, lime juice, and cilantro into a blender. Pulse to chop up and combine ingredients into desired salsa thickness.

  2. Pour into serving bowl and mix in drained and rinsed black beans and corn.

  3. Refrigerate to chill-until ready to serve. Enjoy!
