Cilantro Lime Shrimp Pasta

Ingredients

  • 6 ounces pasta boiled and drained
  • 12 ounces shrimp thawed, deveined, and tails removed
  • 1/3 cup lime juice
  • 2 tbsp olive oil
  • 1 tbsp diced jalapeƱos canned
  • 3 tbsp cilantro leaves
  • 3 cloves garlic minced
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/8 tsp chili powder
  • 2 tsp corn starch

Instructions

  1. Boil pasta according to the packaged ingredients while you make the sauce.

  2. In a sauce pan, bring lime juice, olive oil, jalapeƱos, garlic, salt, pepper, chili powder, and corn starch to a boil. Stir continually.

  3. When sauce has thickened a bit 3-5 minutes), add shrimp.

  4. Continue stirring and cooking until shrimp turn pink-about 3-4 minutes.

  5. Add cilantro leaves, stir, and serve over cooked, drained pasta.
