Pumpkin Pancakes with Cinnamon Syrup

Ingredients

Pumpkin Pancakes:

  • 2 cups Bisquick Mix
  • 1/2 cup pumpkin purée
  • 1 tsp pumpkin spice
  • 1 1/3 cups milk

Cinnamon Syrup:

  • 4 tbsp butter
  • 1/2 cup sugar
  • 1/4 cup buttermilk
  • 1 tsp Karo syrup
  • 1/2 tsp baking soda
  • 1/2 tsp water
  • 1 tsp vanilla
  • 1/8 tsp ground cinnamon

Extras:

  • whipped topping if desired

Instructions

Pumpkin Pancakes:

  1. Combine Bisquick, pumpkin puree, pumpkin spice, and milk.

  2. Cook batter on a griddle or in a frying pan. Makes about 8 pancakes.

Cinnamon Syrup:

  1. In a sauce pan, combine butter, sugar, buttermilk and Karo syrup.

  2. Bring to a boil and boil for 2 minutes, stirring continually.

  3. Remove from the heat and add baking soda, water, vanilla, and cinnmon.

  4. Stir to combine.

  5. Serve syrup over pancakes and top with whipped topping.
