Chicken and Pork Kabobs

Kabobs with a Hawaiian flavor.

Ingredients

  • Wooden or Metal Skewers
  • 1 pound boneless pork ribs cut into chunks
  • 1 pound chicken breast cut into chunks
  • 1 pound bacon strips cut into thirds
  • 2 green peppers cut into large chunks
  • 1 red onion cut into large chunks
  • 8 ounces fresh mushrooms cut into halves
  • 1 fresh pineapple cut into large chunks
  • 4 large Roma tomatoes cut into chunks

Marinade Ingredients:

  • 2 large garlic cloves minced
  • 1/2 tsp ground ginger
  • 1/2 tsp pepper
  • 1/4 cup olive oil
  • 3/4 cup soy sauce
  • 1/4 cup dark brown sugar
  • 1/2 cup pineapple juice

Instructions

  1. Combine all marinade ingredients in a large bowl. Add cut up chicken and pork, cover with plastic wrap. Let mariate for at least 2 hours in the refrigerator.

  2. Cut up fruits and vegetables.

  3. Place the pieces of marinated meat, bacon, fruits and vegetables on skewers.

  4. Grill until the meat is cooked through.

  5. Serve and enjoy!
